I recently made this for my boys (husband and 10.5 month old son) and they LOVED it. I was looking to clean out a few veggies from the refrigerator and got “creative” – of course when I say creative I mean by my standards (ha!). I modified the recipe for Alexander by swapping regular pasta for brown rice pasta (extra fiber) and also left out the seasoning and onion.
If you’re looking for an easy side for an upcoming party or something simple that you can prepare in advance for week night meals, look no further! You can even turn this into your main course by adding a protein of your choice.
Greek pasta salad
What you’ll need:
– 1/2 of a medium red onion
– 1/2 of an English cucumber
– 1 1/2 cups of grape tomatoes
– 1 cup of kalamata olives (pitted)
– 1 cup of Macedonian feta cheese (creamier than Greek)
– 3/4 of a box of your favourite pasta (we prefer rotini)
– 1/2 cup of cold pressed extra virgin olive oil
– 1 tbsp of oregano
– Salt and black pepper to taste
Preparation:
– Cook pasta according to instructions on package (allow pasta to cool for 20 mins)
– Finely chop cucumber and red onion
– Cut grape tomatoes into halves
– Add olive oil to cooked pasta
– Add crumbled feta, oregano, salt, pepper
– Add grape tomatoes, onion, cucumber and olives
– Mix all ingredients together
